Thanks for sharing that awesome performance from Martin Wolfl :) And no matter the price, I will always have budget for a great flat white. My message to baristas is push back on your roasters to get the best product they can produce - that is the foundation of what gets into the cup.

Martin Wolfl's performance was a fun watch. There's a whole YouTube playlist of performances that are worth checking out if you want to absorb some of the stoke of these great baristas.

There's a reason why a Flight Coffee flatty costs more than Coffix - it's the bean quality.

The communication of coffee quality isn't dissimilar to that of wine - most people get why some wines cost more than others. Unfortunately, coffee hasn't been as quick to communicate that to the public and are, in my opinion, behind the eight ball here. Part of the problem is that as we cant really grow coffee here (northland is the exception), we can't see, hear,feel the voice of the farmers. Some roasters try to spotlight the farmer, but it's really hard to achieve that same connection unless people can really go there.

It's certainly an interesting challenge for the coffee industry!
